Tandoori Sweet Potato Quesadillas

Sometimes we overlook the simplest meals during celebrations. Quesadillas make the most underrated holiday appetizers. Enjoy these as appetizers or a quick weeknight dinner. The tandoori masala adds a unexpected surprise and this dish comes together in minutes.



Tandoori Sweet Potatoes Quesadillas


Ingredients:

2 Tbs of Tandoori Masala

3/4 Tsp of salt

1 Sweet potato cubed

1 C of frozen corn

1 Can of Refried beans

Tortillas or Rotis

Chopped cilantro for garnishing

Cheddar cheese

Oil or butter for cooking



Methods:

  1. Preheat the oven to 425 F.

  2. In a baking tray add the corn and sweet potatoes. Toss with oil, tandoori masala, and the salt. Roast the veggies in the oven for 20 mins.

  3. Take a tortillas and spread the refried beans. Top with veggies, cilantro and about 1-2 Tbs of cheese.

  4. Cover with another tortilla and cook on a griddle till the cheese is melted and the tortillas are golde


n brown.
