Roasted Sweet Potato and Beet Pizza

The words "guilt free" should not be associated to food. My younger self would have called this a "guilt free" pizza recipe but I am learning to be kinder with my words. It's a long road :-D I may not associate guilt as an emotion any more, but I do like foods that make me feel good. I love pizza. That's it. No exceptions. I like everything from Pizza Hut to gourmet wood-fired pizza.
This pizza recipe is a gut friendly version that requires minimal effort. I am using cheese and I know diary can be inflammatory so make sure to understand your gut health before trusting the internet (yes, that includes EVERYONE). This is a fantastic meal idea for parties, since you can set up a pizza making station without the added fuss of 20 ingredients! As much as I enjoy making my own pizza dough, this recipe uses pita as the pizza base.
Ingredients
4 Store Bought Pita Bread
1/2 C Ricotta Cheese
4 - 8 Tbs of Goat Cheese
2-4 Tbs of Dried Italian Seasoning
1 Beet
1/2 Large Sweet Potato
Salt and pepper to taste
Methods
Preheat the oven to 400 F
Cut the sweet potato and the beet into thin circles. Drizzle with some olive oil, sprinkle salt and pepper. Place the beets and sweet potatoes on a baking sheet and bake them for 15-20 mins.
In the meantime, take a pita and generously spread some ricotta cheese on it.
Sprinkle with 1/2 - 1 Tsp of Italian seasoning per pita
When the beets and sweet potatoes are roasted, add them to each pita.
Top with goat cheese or you can use ricotta.
Return your pitas to the oven and let it make for 15-20 mins or until the crust is golden brown.
Notes:
I didn't take pictures because we were hungry but if you have some balsamic glaze, make sure to drizzle it on top.
